last night i had a sugar tooth, so i made some cupcakes! the recipe is from the cookbook vegan cupcakes take over the world.
1 cup soy milk
1 teaspoon apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon almond extract, chocolate extract, or more vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder, dutch-processed or regular
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup of chopped oreos
bake at 350° for 18-20 minutes
once the cupcakes are out of the oven and have cooled off, you can now add the frosting! the frosting recipe i used is also from the cookbook vegan cupcakes take over the world. it is called "vegan fluffy buttercream frosting."
1/2 cup nonhydrogenated shortening
1/2 cup nonhydrogenated margarine
3 1/2 cups powdered sugar
1 1/2 teaspoons vanilla extract
1/4 cup plain soy milk or soy creamer
1/2 cup of chopped oreos
then once that is done, you can add half of an oreo to the top of the cupcake! ta da!
omg these little treats came out looking so yummy! makes me want to try them out for myself lol.

Is that you favorite recipe from VCTOTW?
Those cupcakes look so yummy. I have to make some vegan cupcakes for my sons birthday next week and those look like they might be the best choice ever :) I haven't ever baked out of that cookbook. I made his cupcakes last year from How It All Vegan. My non-vegan friends were't sure that they liked the molasses flavor. Hopefully these will be a bigger hit. Thanks for the recipe. I may have to pick up the cookbook.
ReplyDeletecourtney, i have yet to make other ones from that cookbook. i've only made these ones and then just plain vanilla and chocolate ones. i need to try out the others soon. they are great!
